Following the success of our initial training pilots, I designed the "Basic Cooking Techniques" intensive specifically for our existing staff. This wasn't just a cooking class; it was a strategic move to standardize technical execution across a massive kitchen operation. By formalizing our "house style" for everything from fish portioning to freezer organization, we reduced variability and empowered our crew to lead with confidence.

  • Strategy: Developed a formal "Skills-to-Plate" curriculum to bridge the gap between entry-level prep and high-end banquet execution.

  • Result: Created a scalable training template that allowed Sous Chefs to act as instructors, decentralizing specialized knowledge and fostering a culture of internal promotion.
